Dion Tidmarsh Dion Tidmarsh is head chef at The Golden Lion, Magor. He began his career as protégé of award winning head chef Trefor Jones and from there worked in the Berkeley Hotel in Knightsbridge to work with Executive Head Chef Andrew Turner in their applauded 4 Rosette Restaurant. From there he worked in Quaglinos in London and has held numerous head chef positions in restaurants including; the Orient Express - working on the Northern Belle, Hurst House Group for Neil Morrisey where he was in charge of their restaurant group which consisted of Hurst House, Laugharne, Three Mariners, Browns Hotel and the private members club Hurst House in Covent Garden London. He was then Head Chef at the Newbridge on Usk for Chris Evans until it was sold to the Celtic Manor. Dion is delighted to be Joint Head Chef at The Golden Lion in Magor whose motto is “simply great food” and is looking forward to an exciting career back in his home county of Monmouthshire.
