History 

The Priory is nestled within the historic town of Caerleon on the River Usk. Founded by Hywel Ap Iorwerth, a Welsh Prince and dating back to 1180, the Priory started life as a Cistercian Monastery.When the monks moved on, The Priory later became a Nunnery, private residence and since 1996 this beautiful building and it’s secluded grounds have been home to the Priory Hotel and Restaurant.

We want your stay with us to be relaxing, enjoyable and focused on fantastic food. The Priory is the perfect setting to unwind, enjoy the best locally sourced cuisine, and have a truly memorable stay in the historic town of Caerleon. 

Restaurant

At The Priory, we do things a little differently. We offer you the opportunity to hand pick your choice of fish or cut of meat from our glass display fridges, which we will then be simply but expertly prepared for you.Our counter concept is born from the coastline of Northern Spain, where superb quality seafood is abundant by money is sparse. The fishermen would trade directly with the restaurants and the days fresh catch go straight onto an ice laden table in the centre of the room. 

The desire to showcase the freshness and quality of the product is what led to our family introducing the counter concept to Wales.

Hotel 

Classic on the outside, contemporary on the inside with 22 bedrooms spread across the main building and 5 rooms in our cottage. A variety of rooms offer great comfort and excellent value for business and leisure stays.

Our Bodega

In our on-site bodega we offer you access to a range of products and ingredients which are regular ‘go to’ items for us, and which give us inspiration for some of the dishes we create along the way.
